Audrey Noyes celebrates 15 years with Ava’s and Theo’s in St. Michaels

Audrey Noyes of Claiborne, Maryland is celebrating 15 years with Theo’s Steaks, Sides & Spirits and Ava’s Pizzeria & Wine Bar in St. Michaels, Maryland, both part of Ava’s Hospitality Group.

Noyes was born in Baltimore and moved to Claiborne when she was two years old. She studied Mass Communications at Towson University and worked at the Chesapeake Bay Maritime Museum and Foxy’s before joining Ava’s and Theo’s.

Noyes began at Ava’s Pizzeria & Wine Bar two weeks after the restaurant opened in 2008 working as a daytime bartender and weekend hostess. At the time, Noyes was one of two staff—she and the chef—who helped during the daytime shifts with Agharabi.

She started working at Theo’s Steaks, Sides & Spirits when it opened in 2011, first as a server while also still working at Ava’s. She became a manager in 2014 and is now serving as the restaurant’s General Manager.

“One of the most rewarding parts of my job is the feedback we receive from customers,” said Noyes. “To hear someone say that was the best steak in my life, for example, just adds a great vibe to working here.”

Noyes says she has also built friendships with several customers and staff over the years and especially appreciates the customers who come back year after year.

“We have an excellent kitchen team,” she says. “I enjoy watching our kitchen staff gain skills and learn techniques all while putting out some really great food.”

Theo’s Steaks, Sides & Spirits features several cozy dining rooms on two floors, including a private dining room for up to 12 guests, and can serve up to 100 people.

The restaurant is open for happy hour and dinner six nights a week, with specials like Burger Nite on Tuesdays, Prime Rib Wednesdays, Chateau Thursdays, and Sunday Suppers. Online reservations are encouraged, with more at www.theossteakhouse.com.
